Amazing Chicken Recipe

Last friday night we had a couple families from church over for dinner.  I made one of my favorite meals!!  I love to make this when we have company because EVERYONE loves it and best of all it is so easy. 
I did make mac n cheese for all the kiddos.  I don't do that normally but for company I will.

Bacon-Feta Stuffed Chicken:

4 Boneless/Skinless chicken breasts (Obviously more for more people)
1/4 c cooked and crumbled bacon (in the past I have substituted with turkey bacon)
1/4 c crumbled feta cheese (I prefer to use low fat)
1/2 tsp salt
1/4 tsp pepper
1 Tbsp Olive Oil
2 cans diced tomatoes
1 Tbsp dried basil

Cut a pocket into each chicken breast.  Fill with the bacon and feta cheese; then secure closed with toothpicks.  Season chicken with the salt and pepper.  In a large skillet brown chicken in the oil.  Once both sides are fully cooked thru, add one can of drained tomatoes and one can undrained.  Sprinkle with the basil.  Cover and simmer 10 min.  Uncover; simmer 5 min longer.
I made couscous from a box.  I prefer the pre-seasoned kind.  It saves so much timeWe also had a salad and italian bread.

This was the first time I made this dessert.  I didn't like it very much.  I could tell some guests liked it and some didn't.  That is why when we have company I use recipes I have made before!!
